How to Fillet a Hogfish

When you’re filleting a hogfish, you must first ensure that you have the proper counter space, a decently-sized cutting board, and a flexible fillet knife.

Place the hogfish on the board and make an incision around the gill plate of the fish near the head. Make sure you make the incision from the very top of the head down towards the belly of the fish. Once you make the incision, carefully glide your knife down the backbone of the fish from the head to the tail. As you’re gliding the blade down, peel the meat back to ensure that you’re slicing properly. As you’re slicing, keep the blade as close to the bone as you possibly can so that no meat is wasted. Once you’re done, you should be able to have two fillets of hogfish.
