Having grown up in the Keys in the 1950s, smoked fish...usually amberjack, kingfish or sailfish...was a "snack staple". Buttonwood was the go to wood for smoking and an old refrigerator with the firebox attached was the smoker. I'm sure the process has changed slightly, but KLF's result is still, in my opinion, some of the best smoked fish there is!
