Freshly Frozen Grey Tilefish 8oz Portion

I recently ordered mutton snapper and grey tilefish from Key Largo Fisheries for home delivery, and both were absolutely extraordinary.

The mutton snapper was beautifully flaky, moist, and delicate, with precisely the texture and flavor I hope for when buying premium fresh-frozen seafood. It was excellent.

But the grey tilefish was the real revelation. It had a wonderfully clean, mild white-fish flavor, with subtle sweetness, a buttery richness, and an almost nutty quality that made it unusually interesting. We pan-seared it to a golden crust, and the flesh remained moist and tender. Of the two outstanding fish we prepared, the tilefish was our favorite.

We served both with a homemade creamy ají molido sauce made from Argentine chile-infused oil, Kewpie mayonnaise, lemon, fish sauce, and a touch of habanero. It was an exceptional pairing.

The prices were very reasonable for fish of this quality. I also love the convenience of keeping individually portioned fillets in the freezer. A quick cold-water thaw, a little preparation, and you can have a seafood dinner that rivals a fine restaurant in approximately an hour.

I'll be ordering again and intend to keep both varieties stocked in my freezer. If you've never tried grey tilefish, I strongly recommend it. It's a wonderful fish that deserves considerably more attention.
